The Aroz Con Pollo is AMAZING! Definitely 2-3 meals worth. It is excellent! Tastes just like it should. Iβve had it in many restaurants & have been so disappointed. Not by this restaurant! Itβs perfect. They gave us tons of chips as well. Everything was perfect & weβll definitely order again, and weβll have to dine in too sometime! This was delivered.
Overview
The first time I walked into Fiesta En Jalisco, it felt like stepping into a place locals quietly guard as their own. Sitting at 1315 S Canyon Rd, Ellensburg, WA 98926, United States, this diner-style Mexican restaurant has the kind of steady hum you only get when a spot is doing things right. Families share booths, college students drift in after class, and the staff moves with the confidence that comes from repetition and care. Iβve eaten here more times than I can count, and the experience has been consistent in a way that matters.
The menu leans into traditional Jalisco-style cooking, and that influence shows up clearly in the sauces and preparation. One server once explained how their carne asada is marinated overnight, using citrus and spices to break down the meat before it ever hits the grill. That tracks with what food science tells us: acidic marinades improve tenderness and flavor absorption, a method supported by culinary research from institutions like the Culinary Institute of America. You taste that patience in every bite, especially when the steak arrives sizzling and properly rested, not rushed from grill to plate.
On one visit, I watched a cook prepare enchiladas step by step, dipping tortillas briefly in warm sauce before filling and rolling them. That process matters. According to food preparation guidelines published by the USDA, controlled heating preserves texture while ensuring safety, and this kitchen clearly respects those standards. The result is a dish thatβs soft without falling apart, layered with flavor instead of drowned in cheese. Itβs the difference between something made with intention and something assembled in a hurry.
Reviews around town often mention portion size, and theyβre not exaggerating. Plates arrive full, but not sloppy. Iβve brought friends visiting from Seattle who expected a quick roadside meal and left talking about how balanced everything felt. One friend, who works in hospitality, pointed out the pacing of service as a sign of a well-run operation. Orders come out hot, drinks stay filled, and no one rushes you out the door. That kind of flow usually reflects solid training and management, something restaurant consultants consistently identify as key to customer trust.
What stands out just as much is how the location functions as a community hub. During peak hours, itβs common to hear staff greeting regulars by name. That familiarity builds credibility. Studies from the National Restaurant Association show that repeat customers are driven more by consistent experience than novelty, and this place clearly understands that. Even when the dining room is full, the atmosphere stays relaxed rather than chaotic.
There are limits worth noting. Like many independent diners, the menu doesnβt rotate often, so if youβre chasing constant seasonal changes, you might feel boxed in. Still, the breadth within the existing offerings covers a lot of ground, from lighter lunch plates to heavier combination dinners. Takeout holds up well too; Iβve tested it on long drives, and the food maintains texture better than most comparable spots.
What keeps me coming back isnβt just taste, but trust. I know what Iβm getting, and I know itβs prepared with care. In an era where many restaurants overpromise and underdeliver, this one sticks to fundamentals and executes them well. That reliability is earned, not advertised, and it shows every time a full dining room empties with satisfied guests heading back into Ellensburg traffic, already planning their next visit.

Great tasting food, good price compared to others Mexican food I have been at. Nice to see many returning customers coming in. I had the number 15, nice large plate, hot and filling. Love the chips and dip as you order and wait for your food so you can come in hungry and snack as your main order is cooking. Thanks for the experience.
We shared Asada Fries, ordered extra crispy. It comes with pico de gallo, but I can't eat raw onions, so ordered without. We also each had a margarita. Great service from Olga, as usual. If you're looking for Mexican food in Ellensburg, go to Fiesta en Jalisco.
Stopped for lunch on our way home. The chips and salsa were very good! We had Michaela's and regular beers. Both were excellent! We both ordered burritos. I got the asada burrito. I regretted not getting the shredded beef burrito honestly. The asada was ok, it was cooked well but diced so small I could hardly taste the beef it was blown out by all the other flavors. The veggies and the sauce were really good both tasted fresh and delicious! My Fiancee had the shredded chicken burrito. She lives hers! Over all we were very happy with our visit.
